This award, presented by the Michelin Guide, honours restaurants that incorporate environmental, social, and ethical criteria into their approach to gastronomy.

We work with a responsible and conscious vision, championing local produce, collaboration with local producers, and efficient resource management. We take care of every detail to actively contribute to the well-being of the environment and the people within it.

This commitment is also reflected in our cuisine, where we develop recipes that highlight the full utilisation of produce. Each ingredient is treated with respect and creativity, resulting in dishes that express our philosophy: excellence, responsibility, and consistency.

Committed to new environmental challenges, we position ourselves as leading figures in sustainable haute cuisine In the gastronomy sector. We have consolidated a strategy based on the circular economy and the use of renewable energies, which has allowed us to obtain the Repsol and Aenor “Energy Excellence Kitchens” certification. This distinction highlights our effort to reduce our carbon footprint and promote energy efficiency, demonstrating that innovating in sustainability is part of our essence.

First Solar Community in Gastronomy

At Cenador de Amós, we have taken a decisive step towards sustainable innovation with the creation of our First Solar Community in Gastronomy. In partnership with Repsol, we have developed a pioneering model of collective self-consumption, which enables the generation and consumption of local energy in a 100% renewable and highly efficient manner.

This innovative project not only reinforces our commitment to sustainability but also contributes to the reduction of our carbon footprint by sharing energy with our neighbours in Villaverde de Pontones. In this way, we are merging fine dining with an eco-responsible vision, demonstrating that gastronomic excellence can and must go hand-in-hand with a deep respect for the environment.

In a completely rural setting, at Cenador de Amós we operate with the conviction that each link in the value chain is fundamental to building a unique and sustainable gastronomic offering. We are committed to boosting the local economy by directly selecting nearby producers, without intermediaries, and we champion fair trade practices that consolidate the roots of our territory.

We firmly believe in the importance of respecting the seasonality of the organic produce we cultivate. To this end, we have our own seedbed and vegetable garden, where each vegetable and fruit develops in perfect harmony with the natural cycles of its surroundings. Furthermore, we promote a rigorous system of recycling and waste separation, which allows us to reduce our environmental impact and foster a circular economy.

Our 360º approach spans from the product's origin to the diner's final experience, ensuring that each initiative is part of a harmonious and sustainable process. This translates into high gastronomic quality that, at the same time, preserves and celebrates the rural and ecological heritage of Cantabria.

At Cenador de Amós, we are just as passionate about sustainable transport as we are about every dish we serve. We have three DS electric cars that ensure we travel in an environmentally friendly way: one electric 100% and two hybrids, which enable us to meet our efficiency standards.
Furthermore, we are reinforcing our commitment by installing a dedicated charging point capable of charging two vehicles simultaneously. Thanks to the 100% renewable electricity supplied by Repsol, we are significantly reducing harmful emissions and helping to combat climate change.
This innovative solution is an extension of our 360º philosophy, uniting gastronomic excellence with responsible practices that care for the planet.

Betting on ecodesign and interior design that is responsible towards the environment, people, and the planet.

At Cenador de Amós, interior design transcends aesthetics and becomes a lived experience. Every element that makes up our spaces is conceived under the principles of eco-design and responsibility, reflecting a deep connection with the environment and the well-being of people.

All our new furniture is made from FSC®️-certified wood, sourced from reforested forests with a chain of custody from tree to finished product. Furthermore, our tables – inspired by the finest marble – are crafted from an antibacterial material, the result of extensive research, and designed in collaboration with chef Jesús Sánchez.
This synergy not only beautifies our environment but also contributes to the reduction of our carbon footprint, marking an essential action for curbing climate change.

Social Responsibility

At Cenador de Amós, social responsibility is the engine that drives our relentless pursuit of excellence.

Our commitment goes beyond gastronomy; it translates into ethical and conscious management of our local resources, working hand in hand with farmers and local artisans who share our mission and vision.

We are proud to carry out our own composting in a controlled environment, promoting the use of organic fertilisers free from chemical additives in gardens and allotments, to nourish both our plates and the earth that gave them birth.

With a work philosophy that embraces the local terroir, we have managed to put our small village of 300 inhabitants on the map, consolidating a network of local producers and betting on quality products, «from the land to the plate.» In this way, we actively contribute to the regeneration of the rural fabric and the fight against depopulation, adding value to the cuisine and gastronomic heritage of our area.

In the heart of a privileged rural environment, we promote a strong local economy by sourcing directly from nearby producers, cutting out intermediaries and favouring fair trade. Today, more than ever, sustainability and the creation of value chains in rural areas are fundamental for a prosperous and balanced future.
 
We respect the seasonality of the organic produce we grow in our own vegetable garden, practising responsible recycling and maintaining our own seedbed. With a zero-kilometre philosophy, our local cuisine tells the story of our region through each dish.
 
We are committed to a new operating model that prioritises our commitment to the environment and renewable energy, working towards achieving zero carbon emissions. From the value chain of our local producers to the final consumer, we generate a 360º movement that integrates sustainability and quality.
 

Commitment to Renewable Energy

The Michelin Guide has honoured us with the Green Star, recognising our commitment to the health of the planet and the environment. Our strategic approach includes a roadmap for CO2 emission reduction, combining LPG and electricity, and collaborating with Repsol to further our environmental commitment.
 
We are the first Solar Community in the catering sector, thanks to a pioneering partnership with Repsol. This collective self-consumption model enables us to generate and consume 100% renewable local energy, sharing it with our neighbours in Villaverde de Pontones. We are moving towards targets for renewable energy generation, low-carbon products, and a circular economy that reduces our environmental footprint.

Commitment to local producers

We understand social responsibility as a path to excellence, collaborating closely with local farmers and artisans. We share a mission of dedication and passion, working together to promote quality, locally sourced (km 0) products that value the cuisine and produce of our region, thereby contributing to fighting rural depopulation.

Eco-farming: Without Pesticides or Chemical Fertilisers

We support local growers like Eco-Tierra Mojada, who cultivate vegetables and fruits ecologically, respecting the natural balance of soil and water. This practice favours better use of local resources and reduces the environmental impact of transportation.

Hydroponic cultivation

We collaborate with pioneers like Gota Viva in hydroponic cultivation, where lettuces grow in water without herbicides. This closed system minimises water consumption, uses rainwater, and avoids environmental waste. We focus on sustainable practices, minimising the use of energy and heavy machinery, with a step towards energy self-sufficiency.
